Vegan Apple Kuchen Squares

Hi everyone! Hope this post finds you well and you are ending off the year well. I absolutely love November and December because it’s a time for me to enjoy family gatherings, cook yummy comfort foods and prepare to knock next year off it’s socks. Can you believe that we are almost in 2020???

I am so excited to share this recipe with all of you today!

I love desserts. I also call all desserts – “pudding”, which confuses all of my American friends because apparently those two words are not used interchangeably here. They are for me so here we go. These Apple Kuchen Squares are a great Thanksgiving or Christmas pudding or appetizer to take to any holiday gathering. They can be paired well with ice cream, my favorite is Nada-Moo French Vanilla.

I found the recipe at the Publix (grocery store for my foreign friends) featured meal area. It’s a genius idea really. They have a refrigerated area near the food demonstration area that has a featured recipe and ALL the ingredients right there for you to put in your cart. Unfortunately they are often very meat-based and not the easy recipes to substitute, but I really won this week with two desserts that I’m trying out. This one being one of them!

I ate some, took some to my mom and step dad, and then froze the rest for another day. Daniel and I love taking out frozen treats every now and again to have with tea when Oliver has gone down for the night. Oliver didn’t love them but I don’t mind because they have quite a bit of sugar in them so I did not want him bouncing off the walls.

Anyone else enjoy eating dessert after the kids have gone to bed?

Alway, hope your holiday season is off to a good start! I’m looking to start some family traditions now that Oliver is old enough to really enjoy them.

One of the things we always have done is go to our big family gathering in Pennsylvania on the weekend before Christmas. There are about 92 of my Dad’s siblings and their families, but usually only about 50-60 can come to a convention center and rent it out (like a hotel). We call it the “Miller Christmas” because that was my last name before I got married.

We play games, eat food and have so much fun every single year! I’ve had the BEST memories of going as a little girl, and would look forward to coming all the way from South Africa when we could! Now we don’t miss one and have been for the last 6 years since we moved to the states. These Apple Kuchen Squares would be a great dessert to take since they travel so well and can’t really be squashed or anything. If you are traveling, these are a great option.


Vegan Apple Kuchen Squares

Delicious variation to the apple cobbler or apple crisp. These Apple Kuchen (Cake) Squares are perfect for any Fall and Winter occasion.

Ingredients

For the crust

  1. nonstick aluminum foil

  2. 1 cup cold vegan butter cubed

  3. 2 cups flour

  4. 1/4 teaspoon kosher salt

  5. 3-4 TBSP ice-cold water

For the filling

  1. 6 large Golden Delicious apples peeled and cored

  2. 1 cup packed brown sugar

  3. 2 tsp ground cinnamon

For the topping

  1. 1/2 cup cold vegan butter cubed

  2. 1 cup flour

  3. 1 cup packed brown sugar

  4. non-dairy vanilla ice cream optional

Instructions


Preheat oven to 375°F. To prepare the crust, cut the butter into small cubes. Place butter, flour, and salt in food processor and pulse 8–10 times or until crumbly. Drizzle in water, 1 tablespoon at a time, pulsing until dough begins to form a ball and pull away from the sides.


Line 13- x 9-inch baking dish with foil. Place dough in center of dish, then spread the dough evenly over bottom of dish all the way to the edges. Bake for 20 minutes and set aside.


To prepare the filling, peel and core apples, then slice thinly (about 6–8 cups). Combine the apples, sugar, and cinnamon then set aside.


To prepare the topping, cut the butter into small cubes. Place the flour, sugar, and butter in food processor bowl, pulsing 6-8 times or until crumbly.


To prepare the kuchen, spread the apple filling evenly on top of the baked crust, then sprinkle evenly with the flour/butter/sugar topping. Bake 60–70 minutes or until apples are tender and topping has browned. Let stand 1 hour to cool before cutting into squares. Serve warm with non-dairy ice cream, if desired. (Makes about 16-20 small servings.) Enjoy!

Notes

  1. I used a Vitamix (as Santa hasn’t given me a food processor yet) but it made the dough very sticky and hard to spread well. 

  2. The recipe says 12 servings but these bars are sweet and not very healthy so I cut mine into 20 small squares and they were perfect!
