Tuesday: Smoothie Bowls Wednesday: Homemade sushi Thursday: Pineapple Fried Rice Friday: Leftovers Saturday: Homemade Pizza Sunday: Fusilli Pasta Monday, Tuesday and tonight (Thursday) went as planned but on Wednesday I finished my shift at Y2 and had to go get Daniel and Oliver from my Mom’s house in Matthews so dinner plans went out the window. I had to feed Oliver and his bed time was fast approaching so I called my favorite sushi place, New Zealand Café, to order takeout
One of the comments I get the most regarding being vegan is that it would be too hard. Honestly, it was a little tricky in the beginning for me, but now it’s easy as pie. It took me about 6 months to transition from vegetarian to vegan (read about that here) and what helped me the most was meal planning. Also having Ensley as my vegan cheerleader was pretty helpful. Check out my favorite routines and meals below! 9:00 am After sleeping for about 10 hours, waking up a few times in the night (thanks pregnancy!), I drink Kangen water to get me g
