    Vegan Vegetable Lasagna

Best Vegetable Lasagna My mom told me that the secret to our family lasagna recipe being so good is that we use white sauce. Apparently here in the States, the white sauce isn’t commonly found in lasagna recipes. No wonder people always love ours! The creamy white sauce adds so much flavor to an already delicious dish so don’t skip this step. This dish takes an hour to prepare and 35 minutes to cook. It’s quite an investment, so it’s definitely not in my “Easy Vegan Dinner” c

    Vegan Tofu Penne

I’m on a summer pasta salad kick so I’m trying out all sorts of different combinations and am loving experimenting with different flavors. The Fusilli Pasta I posted a little while back has a fun tomato and olive flavor, while this Tofu Penne Pasta has a creamy cashew avocado flavor. I’ve been serving Ollie more finger foods again lately because we went to the Doctor and she said that he can eat everything that we are eating, with special care not to have too much salt (and o

Vegan Lactation No-Bake Cookies + My Breastfeeding Journey

Breastfeeding is one of those things that I hadn’t heard much about before I had to do it. Of course I went to the classes and practiced with a little doll but you really just have to dive in and navigate as you go. I wasn’t breastfed as I am adopted (have I mentioned that before?) and so is my brother. Our only other family in SA was my aunt and uncle and they also adopted two kids funnily enough. We are all #formulastrong and were happy bottle feeders, but that just meant t

Plant-Powered Families’ Vegan Spinach Artichoke Dip

First of all, I’ve always said it, “spinach and artichoke” dip, though on Pinterest you’ll find a lot of recipes titled “Artichoke Spinach Dip”. Spinach sounds like it must go first right? There are unsaid rules about word pairings and if you mess with them, there could be consequences. I mean try saying: Pepper and salt Gentleman and ladies Jelly and peanut butter Eve and Adam Breakfast and bed Found and lost If my list is driving you crazy, get your fix of the correct pairs

    Vegan Veggie Pot Pie

Me (with my stick-legs) and my cousin Kati! Our school had a “tuck shop” that sold sweets, chocolates, drinks and pies. Can you believe they have a Steak and Kidney pie. Ew. Gross. These were hand held pies, which are the best because you get the perfect ratio of filling to crust. 20% filling, 80% crust. First day of third grade. Think my dress is long enough? I got a bee in my bonnet one day about making a vegan version of the pie and so I did. It uses the same, or similar,

    Decadent Chocolate Cake

Mom made this cake for almost every birthday party and I loved it. I didn’t even know to call it “vegan” until I was sorting out my recipes two years ago and giggled with delight when I saw it didn’t call for eggs or butter. That wouldn’t have been a problem as I am the queen of substituting, but it just made my job easier. The baking soda and vinegar (science project flashback anyone?) really hold it together and keep it soft and tasty. No one likes a dry cake! The icing is

Scones + Jam + Coconut Cream

One of the distinctly British things that we do is have scones and tea. And it’s not pronounced scOnes, with a long O sound, it’s said “scon” with a short o sound. I see why it’s confusing because there is an ‘e’ at the end that would indicate the long O sound. I don’t blame you for saying it like that, it just doesn’t sound proper. Cheeky, I know. Tea time is twice a day in South Africa, although somehow we manage to drink about 6 cups a day. It’s usually at about 10am and 3

    Fettuccine Alfredo

Some vegan recipes call for nutritional yeast, but I haven’t tried that yet. I know Ensley loves her nutritional yeast, so I’ll have to add it the next time and let you know! I use this white sauce recipe for my famous Veggie Pot Pie, so get cookin’ now and you’ll be a pro at making it by the time I get the pie recipe up on the blog. There are two important things to remember about this dish: The cashews need soaking. That’s the only high-maintenance thing about this recipe.

    Chilled Cucumber Tahini Soup

I feel like a bit of an ostrich with her head in the sand at the moment. I’m trying to finish up my yoga teacher training which involves reading, studying, memorizing, planning our community event and assisting classes. I’m also trying to sort out my name change (after 9 years of marriage…lol), fit in appointments with the Midwives, hospital tours, and parenting classes. So sometimes I just lie down and pretend that I don’t have adulting to do. Ensley gave this recipe to me t

    10 Favorite Summer Salads

We’ve still got your back this summer with these 10 salads to simply throw together. The vegan community is overflowing with amazing recipes. We are so grateful to be a part of it! I (Kendra) grew up having a garden side salad every night for dinner. It was actually the only thing that I could make by the time I was in College and had moved out of the house. I usually liked them without dressing, which to me now is not appetizing at all. I have my salads now with balsamic vin

    No-Cook Pita Pockets

Panzanella, but we’ve kept this recipe quick and easy and you’ll love it just as much. This is great as a packed lunch, to take on a road trip, on the plane, to picnics or the pool. Keep the pita and salad separate, and just fill them up when you are ready to chow down. The first time I made these with the left over ingredients in my fridge and pantry, I used black beans and corn, and threw in tomatoes as well. Fiesta Bean Dip with corn and beans. But as you can see, you real

    Berry Antioxidant Smoothie

Berries have a fabulous reputation for being very good for you. These sun-kissed fruits are not only delicious and pretty, but they keep your memory sharp as you age (I just found this out!) and are very important for a healthy digestive system. I could use the extra memory help right now as I head into my third trimester of pregnancy. Who knew remembering what I went into a particular room for would be so hard. I love a good Glowing Green Smoothie, but sometimes a girls gott

    Vegan Caprese Sandwich

I quit meat “cold turkey” when I became a vegetarian overnight about 3 years ago. See what I did there? But cheese…now that was a different story! After being a vegetarian for almost a year, it took another 6 months to transition to being vegan. All because of cheese and milk. I could not see how I was going to live without them. Then I realized, I don’t want or need to use animal products just because I want a snack when there are tons of other options out there. I didn’t li
